Ingredients
- 15 small red potatoes, halved
- water, to taste
- 1/3 cup butter, cubed
- 1/4 cup fresh parsley, minced
- 2 tablespoons chives, minced
- 1 1/2 teaspoons fresh tarragon, minced, or 1/2 teaspoon dried tarragon
- 2 cloves garlic, minced
- 3 bacon strips, cooked and crumbled
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Directions
Step 1 -Place the potatoes in a large saucepan, just covered with the water, then bring to a boil.
Step 2 -Reduce the heat and cook the potatoes, covered, until tender, about 15-20 minutes.
Step 3 -Drain the potatoes well.
Step 4 -In a large skillet over low heat, melt the butter.
Step 5 -Add the parsley, the chives, the tarragon, and the garlic to the melted butter and cook, while stirring, about 1-2 minutes.
Step 6 -Add the cooked potatoes, the crumbled bacon, the salt, and the pepper to the herb butter mixture and toss to coat.
Step 7 -Cook the potato mixture until it is heated through, about 5 minutes.
Step 8 -Serve.
