Thankfully, Takeout Fried Rice is actually a snap to make at home and tastier than anything your local Chinese restaurant can make! In just 30 minutes, you can have the fluffy rice infused with savory soy sauce and filled with bright red peppers, sweet mandarin oranges, juicy beef, and browned onions that you've been dreaming about! Ingredients
- 1 tablespoon plus 1 teaspoon canola oil, divided
- 3 large eggs
- 1 (11-ounce) can mandarin oranges
- 2 medium sweet red peppers, chopped
- 1 cup fresh sugar snap peas, trimmed
- 1 small onion, thinly sliced
- 3 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 4 cups rice, cooked and cooled
- 2 cups beef, of your choice, cooked and sliced against the grain into bite-sized pieces
- 1 cup beef broth
- 1/4 cup reduced-sodium soy sauce
- 1/2 teaspoon salt
- 1/4 teaspoon ground ginger
Directions
Step 1 -In a large skillet, heat 1 tablespoon of the oil over medium-high heat.
Step 2 -Whisk the eggs until blended well.
Step 3 -Pour the beaten eggs into the skillet.
Step 4 -As the eggs set, push the cooked portions of the egg toward the center, letting uncooked portions flow underneath the cooked portions.
Step 5 -When the eggs have thickened and no liquid egg remains, transfer the eggs to a cutting board and chop.
Step 6 -Drain the oranges, reserving 2 tablespoons of the juice.
Step 7 -In the same skillet, heat the remaining oil over medium-high heat.
Step 8 -Add the peppers, the sugar snap peas, and the onions, cooking until slightly tender, about 1-2 minutes.
Step 9 -Add the garlic and the red pepper flakes and cook until fragrant, about 1 minute.
Step 10 -Add the rice, the beef, the beef broth, the soy sauce, the salt, the ginger, and the reserved orange juice and cook until heated through, for about 5 minutes.
Step 11 -Gently stir in the eggs and the oranges.
Step 12 -Serve.
