This refreshing lemon-pepper flavored chicken is simply yet elegantly marinated in bright flavors and then grilled to perfection. Juicy, tender, and savory, Summer's End Lemon Chicken is the kiss goodbye to warm weather... or the first kiss of a new season!

Ingredients
- 1 cup olive oil
- 2/3 cup lemon juice
- 2 teaspoons garlic, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper, plus more, to taste
- 1 medium onion, diced
- 6 (6-8-ounce) chicken breasts, boneless and skinless
Directions
Step 1 -In a bowl, add the olive oil, the lemon juice, the garlic, the salt, and 1/2 teaspoon of the black pepper and whisk to combine.
Step 2 -Add the diced onions to the olive oil mixture and whisk to combine.
Step 3 -In a gallon-size, resealable plastic bag, add the chicken breasts and the olive oil mixture.
Step 4 -Seal the bag and massage lightly to ensure the chicken breasts are evenly coated.
Step 5 -Allow the chicken to marinate for at least 8 hours and up to overnight.
Step 6 -Preheat the grill to medium heat.
Step 7 -Add the marinated chicken breasts to the hot grill and sprinkle them with the extra black pepper.
Step 8 -Cook the chicken breasts, flipping them once, until they reach an internal temperature of 165 degrees F, about 10-15 minutes.
Step 9 -Serve.
