Mmmm, Southern Delight Peach Cobbler. How could you turn down something that sounds so amazing?! We don't think it's physically possible! Just look at that glorious photo! The way the cobbler crust is perfectly cinnamon-y and shimmering with golden beauty. And the juicy, sweet, warm peaches are just waiting for a large scoop of vanilla ice cream to be melted all over top. It's way too mesmerizing to ever turn down this Southern Delight Peach Cobbler. Ingredients
- For the filling:
- 8 fresh peaches, peeled and pitted, sliced into thin wedges
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1 teaspoon fresh lemon juice
- 2 teaspoons cornstarch
- For the brown sugar topping:
- 1 cup all-purpose flour
- 1/4 cup plus 3 tablespoons white sugar, divided
- 1/4 cup brown sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, chilled, cut into small pieces
- 1/4 cup boiling water
- 1 teaspoon ground cinnamon
- vanilla ice cream, optional, to taste, for serving
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -In a large bowl, combine the peaches, 1/4 cup of the white sugar, 1/4 cup of the brown sugar, 1/4 teaspoon of the cinnamon, the nutmeg, the lemon juice, and the cornstarch and toss to evenly coat.
Step 3 -Pour the peach mixture into a 2-quart baking dish.
Step 4 -Bake the peach mixture for 10 minutes.
Step 5 -While the peach mixture is baking, combine the flour, 1/4 cup of the white sugar, the remaining brown sugar, the baking powder, and the salt together in a large bowl.
Step 6 -Blend the butter into the flour mixture with your fingertips or a pastry blender until it resembles coarse meal.
Step 7 -Stir the water into the flour mixture until just combined.
Step 8 -Drop spoonfuls of the topping over the peach mixture.
Step 9 -Mix the remaining sugar and the remaining cinnamon together in a small bowl.
Step 10 -Sprinkle the cinnamon mixture over the cobbler.
Step 11 -Bake until the topping browned and cooked through, about 30 minutes.
Step 12 -Serve the cobbler warm topped with the ice cream.
