Ingredients
- 1/3 cup olive oil
- 10 cloves garlic, minced
- 1 1/2 teaspoons crushed red pepper flakes
- 1 (28-ounce) can crushed tomatoes with basil
- 1 pound spaghetti
- 1/2 cup fresh basil leaves, thinly sliced
- 1/4 cup fresh mint leaves, roughly chopped
- 1/4 cup fresh parsley, roughly chopped
- 2 teaspoons salt
- 1/2 teaspoon black pepper
- parmesan, to taste, grated, for garnish
Directions
Step 1 -In a large saucepan over medium heat, heat the olive oil until it shimmers, about 1-2 minutes.
Step 2 -Add the garlic to the oil and cook, stirring frequently, until it is fragrant but not browned, about 1-2 minutes.
Step 3 -Add the crushed red pepper to the garlic and stir until it is combined.
Step 4 -Add the crushed tomatoes and their juices to the garlic mixture and stir until well-combined.
Step 5 -Increase the heat to medium-high and bring the sauce mixture to a rolling simmer.
Step 6 -Reduce the heat to medium-low and cook the sauce, stirring occasionally, about 15 minutes.
Step 7 -In a large pot of salted, boiling water, cook the spaghetti to al dente, according to the package directions. Reserve 1 1/2 cups of the pasta water and drain the rest.
Step 8 -Add the basil, the mint, the parsley, the salt, and the pepper to the sauce and stir well to combine.
Step 9 -Add the cooked spaghetti to the sauce and stir to coat.
Step 10 -Add 1 cup of the reserved pasta water to the spaghetti mixture and stir until it is absorbed. Then, stir in the remaining pasta water.
Step 11 -Reduce the heat to low and cook the spaghetti mixture, about 2 minutes. Transfer the saucepan from the heat.
Step 12 -Serve the spaghetti mixture garnished with the parmesan.
