Savory sausage and fluffy tater tots are baked up in a filling, hearty egg mixture so you get the full breakfast experience in each bite. A cheese and tomato topping adds richness, sharpness, and brightness that makes the Shepherd's Inn Casserole just the most comforting dish around! Mmmmm, mmm so good!

Ingredients
- 1 1/2 pounds bulk pork sausage
- 4 cups frozen tater tots
- 1 cup cheddar cheese, shredded
- 4 large eggs
- 1/2 cup 2% milk
- 1 tablespoon green onions, minced
- 1/8 teaspoon pepper
- garlic powder, to taste
- 2 tomatoes, sliced and quartered
- chives, to taste, minced, for garnish
Directions
Step 1 -In a large skillet over medium heat, add the sausage and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
Step 2 -Drain the fat from the skillet.
Step 3 -Spread the sausage in an ungreased 7x11-inch baking dish.
Step 4 -Top the sausage with the tater tots.
Step 5 -Sprinkle the tater tots with the cheese.
Step 6 -In a large bowl, add the eggs, the milk, the onions, the pepper, and the garlic powder and beat until just blended.
Step 7 -Pour the egg mixture over the cheese layer in the baking dish.
Step 8 -Cover and bake the casserole for 30 minutes.
Step 9 -Uncover and bake until set and golden on top, about 20-25 minutes.
Step 10 -Top the casserole with the tomatoes.
Step 11 -Serve garnished with the chives.
