Ingredients
- 2 tablespoons butter
- 4 cloves garlic, minced
- 8 ounces baby bella mushrooms, sliced
- 1/8 teaspoon salt, plus more, to taste, optional
- 1/8 teaspoon freshly cracked pepper, plus more, to taste, optional
- 8 ounces fettuccine
- 2 1/2 cups vegetable broth
- 1/3 cup heavy cream
- 1/4 cup grated parmesan
Directions
Step 1 -Add the butter and the garlic to a deep skillet and sauté over medium heat for 1 minute.
Step 2 -Add the sliced mushrooms, the salt, and the pepper, and continue to sauté until the mushrooms have softened, all of their moisture has evaporated from the skillet, and the edges are beginning to brown.
Step 3 -Add the fettuccine to the skillet, along with the vegetable broth, and stir to combine.
Step 4 -Place a lid on the skillet, turn the heat up to medium-high, and allow the broth to come to a boil.
Step 5 -When it reaches a boil, stir the pasta mixture, replace the lid, then turn the heat down to medium-low.
Step 6 -Continue to let the pasta mixture simmer for about 10 minutes or until the pasta is tender, stirring occasionally and always replacing the lid. There should be a little saucy liquid left in the bottom of the skillet.
Step 7 -Add the heavy cream to the skillet and stir to combine.
Step 8 -Turn the heat off. Add the parmesan cheese and continue to stir the pasta until the parmesan is melted.
Step 9 -Taste for seasoning and adjust the salt and the pepper as desired.
Step 10 -Serve.
