When our friend snitched to us about Maggie's Chicken Gnocchi Soup, we were sure to tell everyone we knew the juicy truth about it! With tenderly cooked chicken and gnocchi simmered in a savory, seasoned, creamy broth, well, let's just say a certain Italian restaurant known for its olives and its gardens will be knocking on your door for this one. No matter what the talk of the town is, Maggie's Chicken Gnocchi Soup is the perfect meal starter or main dish that will satisfy everyone and make them feel like they are family. Protect Maggie at all costs, but keep on sharing this forever-loved favorite. Breadsticks, optional.

Ingredients
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1/2 cup celery, diced
- 2 cloves garlic, minced
- 1 cup onion, diced
- 1/4 cup all-purpose flour
- 2 cups half-and-half
- 2 (14-ounce) cans chicken broth
- 1 tablespoon fresh thyme
- 1 cup carrots, shredded, plus more, to taste, thin peels, for garnish
- 1 cup fresh spinach, leaves chopped
- 1 cup chicken breast, cooked or rotisserie, diced
- 1 (16-ounce) package potato gnocchi
- salt, to taste
- black pepper, to taste
- fresh herbs, optional, to taste, of your choice, for garnish
Directions
Step 1 -In a large pot or Dutch oven over medium heat, heat the butter and the olive oil until the butter has melted.
Step 2 -Increase the heat to medium-high.
Step 3 -Add the celery, the garlic, and the onion and sauté until they are soft.
Step 4 -Add the flour to the veggie mixture and cook, stirring constantly, until a roux forms, about 1 minute.
Step 5 -Slowly add the half-and-half and the chicken broth to the veggie mixture and cook, stirring constantly, until the soup mixture starts to thicken.
Step 6 -Add the thyme, 1 cup of the shredded carrots, the spinach, the chicken, and the gnocchi to the soup mixture and simmer until the chicken is heated through and the gnocchi floats in the broth, about 5 minutes.
Step 7 -Taste the soup and season with the salt and the black pepper as needed.
Step 8 -Serve the soup garnished with the herbs and the extra carrot peels.
