Ingredients
- For the tomato sauce:
- 3 tablespoons extra-virgin olive oil
- 5 cloves garlic, chopped
- 1/4 teaspoon red chili flakes
- 2 tablespoons tomato paste
- 1 (28-ounce) jar tomato sauce
- 2 tablespoons fresh basil, minced, can substitute 2 teaspoons dried basil
- 2 tablespoons fresh oregano, minced, can substitute 2 teaspoons dried oregano
- For the pizzaiola:
- 2 (1/2-3/4-inch-thick) steaks, such as rib-eye
- salt, to taste
- black pepper, to taste
- 2 tablespoons olive oil
- 1/2 cup white wine
- fresh parsley leaves, to taste, for garnish
Directions
Step 1 -In a large pot over medium-high heat, add 3 tablespoons of the olive oil.
Step 2 -Add the garlic and the red chili flakes to the heated oil and cook, about 1-2 minutes.
Step 3 -Add the tomato paste to the garlic-chili flake mixture and cook, about 4-5 minutes.
Step 4 -Decrease the heat to medium-low. Add the tomato sauce, the basil, and the oregano to the sauce mixture and simmer, about 40-45 minutes.
Step 5 -Season both sides of the steaks with the salt and the black pepper.
Step 6 -In a large skillet over medium-high heat, add the remaining olive oil.
Step 7 -Add the seasoned steaks to the heated oil and sear, about 2-3 minutes per side.
Step 8 -Transfer the seared steaks to a plate and cover to keep them warm.
Step 9 -In the same skillet, add the white wine and use a wooden spoon to loosen the browned bits from the bottom of the skillet. Cook until the wine reduces, about 3-4 minutes.
Step 10 -Add the sauce mixture to the white wine mixture and stir to combine. Cook, about 5 minutes.
Step 11 -Add the seared steaks to the sauce and cook until the beef reaches an internal temperature of at least 135 degrees F for medium-rare doneness, about 4-6 minutes per side.
Step 12 -Serve the steaks topped with the sauce and garnished with the fresh parsley.
