Ingredients
- For the shrimp:
- 1 1/2 pounds shrimp, peeled and deveined, tail-on
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- neutral-flavored oil, to taste, for oiling the grill grates
- scallions, optional, to taste, chopped, for garnish
- For the marinade:
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1/2 tablespoon sesame oil or vegetable oil
- 1 tablespoon vinegar, can substitute lemon juice
- 2 tablespoons garlic, minced
- 1/2 teaspoon fresh ginger, grated
Directions
Step 1 -In a large bowl, add the shrimp, the paprika, the salt, and the black pepper and toss evenly to coat.
Step 2 -In a separate large bowl, add the soy sauce, the honey, the sesame oil, the vinegar, the garlic, and the ginger and whisk until well-combined.
Step 3 -Reserve 2 tablespoons of the marinade mixture.
Step 4 -Add the remaining marinade to the shrimp and toss well to coat.
Step 5 -Let the shrimp marinate at room temperature for 10 minutes.
Step 6 -If using wooden skewers, be sure to soak them in water. Thread 4-5 of the marinated shrimp on each skewer.
Step 7 -Use the neutral-flavored oil to coat the grill grates, then preheat the grill to medium-high heat
Step 8 -Add the skewers to the prepared grill, evenly spacing them out, and grill until charred, about 3-4 minutes per side.
Step 9 -With a heatproof pastry brush, add the reserved marinade mixture on both sides of the shrimp skewers and grill again until the marinade becomes sticky and the shrimp reaches an internal temperature of 145 degrees F, about 1-2 minutes each side.
Step 10 -Transfer the shrimp skewers from the grill and garnish with the scallions.
Step 11 -Serve.
