Ingredients
- For the chicken:
- 2 teaspoons extra-virgin olive oil
- 1 1/2 pounds chicken breasts, boneless and skinless, cut into small cubes
- salt, to taste
- pepper, to taste
- 3 tablespoons honey
- 3 tablespoons low-sodium soy sauce
- 3 cloves garlic, minced
- 1/4 teaspoon red pepper flakes, optional
- Optional, for serving:
- brown rice, to taste, cooked and hot
- green onions, to taste, sliced
- sesame seeds, to taste
- nuts, to taste, such as walnuts or peanuts, chopped
- lime wedges, to taste
Directions
Step 1 -In a large skillet over medium-high heat, add the olive oil.
Step 2 -Lightly season the chicken pieces with the salt and the pepper.
Step 3 -Add the chicken pieces to the skillet and cook, undisturbed, until they are browned on one side, about 3-4 minutes.
Step 4 -In a small bowl, add the honey, the soy sauce, the garlic, and the red pepper flakes and whisk until well-combined.
Step 5 -Add the glaze mixture to the pan and toss to coat the chicken pieces.
Step 6 -Cook the chicken pieces, while stirring occasionally, until the meat is cooked through and reaches an internal temperature of 165 degrees F, about 4-5 minutes.
Step 7 -Plate the chicken over the rice.
Step 8 -Serve topped with the green onions, the sesame seeds, the nuts, and the lime wedges.
