Ingredients
- 6 slices bacon, diced, or bacon bits, to taste
- 4 cups all-purpose flour, plus more for a worksurface
- 1 cup extra-sharp cheddar cheese, shredded
- 1/4 cup fresh parsley leaves, chopped
- 4 teaspoons baking powder
- 2 teaspoons freshly ground black pepper
- 1 1/2 teaspoons kosher salt
- 1 teaspoon baking soda
- 1 teaspoon garlic powder
- 3/4 cup unsalted butter, frozen and grated with the large holes of a box grater
- 1 3/4 cups buttermilk
Directions
Step 1 -Preheat the oven to 450 degrees F.
Step 2 -Line a baking sheet with parchment paper or a silicone baking mat.
Step 3 -If using the bacon slices, in a large skillet over medium-high heat, cook the slices until they are brown and crispy, about 6-8 minutes. Transfer the bacon to a paper-towel-lined plate and drain the excess fat from the pan.
Step 4 -In a large bowl, combine the bacon, the flour, the cheese, the parsley, the baking powder, the pepper, the salt, the baking soda, and the garlic powder.
Step 5 -Stir the grated butter into the flour mixture.
Step 6 -Add the buttermilk to the dough mixture and stir using a rubber spatula until a soft dough forms.
Step 7 -Lightly flour a flat, clean surface and knead the dough 3-4 times until it comes together.
Step 8 -Use a rolling pin to roll the dough into a 1 1/4-inch-thick rectangle.
Step 9 -Cut out 14-16 rounds using a 2-inch biscuit or cookie cutter.
Step 10 -Place the biscuits onto the prepared baking sheet and freeze for 15 minutes.
Step 11 -Transfer the biscuits from the freezer and bake until they are golden-brown, about 14-17 minutes.
Step 12 -Serve warm.
