Ingredients
- 1 3/4 pounds chicken breasts, boneless and skinless
- 6 tablespoons extra-virgin olive oil
- 4 large cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 1/4 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 teaspoons lemon zest
Directions
Step 1 -One at a time, place the chicken breasts in a 1-gallon resealable plastic bag, and using a meat mallet, pound them to an even 1/2-inch thickness.
Step 2 -Mix the remaining ingredients, except for the chicken, together in a 1-gallon resealable plastic bag.
Step 3 -Add the chicken breasts to the marinade and massage the marinade into the meat until evenly coated.
Step 4 -Seal the bag and place it in a bowl in the refrigerator, allowing it to marinate for at least 4 hours.
Step 5 -Preheat the grill to high heat and oil the grates.
Step 6 -Place the chicken breasts on the grill and cook, covered, until the internal temperature reaches 165 degrees F, about 2-3 minutes per side.
Step 7 -Transfer the chicken to a platter and serve.
