Ingredients
- For the noodles:
- 4 ounces Pad Thai dried rice sticks or noodles
- boiling water, to taste
- For the sauce:
- 1 1/2 tablespoons tamarind purée, not concentrate
- 3 tablespoons brown sugar, packed
- 2 tablespoons fish sauce
- 1 1/2 tablespoons oyster sauce
- For the stir-fry:
- 2 tablespoons vegetable or canola oil, plus more, to taste
- 2 cloves garlic, finely chopped
- 1/2 onion, sliced
- 5 ounces chicken breast or thigh, boneless and skinless, thinly sliced
- 2 eggs, lightly beaten
- 1 1/2 cups bean sprouts
- 1/2 cup firm tofu, cut into 1 1/4-inch batons
- 1/4 cup garlic chives, cut into 1 1/4-inch pieces, can substitute chives
- 2 tablespoons peanuts, chopped
- For serving:
- 2 tablespoons peanuts, chopped
- lime wedges, to taste
- cayenne pepper, to taste
- bean sprouts, to taste
Directions
Step 1 -In a large bowl, add the noodles.
Step 2 -Pour a generous amount of the boiling water over the noodles and let them soak for 5 minutes.
Step 3 -Drain the noodles in a colander and quickly rinse them under cold water.
Step 4 -In a small bowl, add tamarind purée, the brown sugar, the fish sauce, and the oyster sauce and stir to combine.
Step 5 -In a large nonstick pan over high heat, add 2 tablespoons of the oil.
Step 6 -Add the garlic and the onions and cook until fragrant, about 30 seconds.
Step 7 -Add the chicken slices and cook, while stirring occasionally, until they are mostly cooked through, about 1 minute 30 seconds.
Step 8 -Push the chicken slices to one side of the pan.
Step 9 -Add the beaten eggs to the open side of the pan and scramble using a wooden spoon. If the pan seems to dry, add the extra oil.
Step 10 -Mix the scrambled eggs into the chicken slices.
Step 11 -Add 1 1/2 cups of the bean sprouts, the tofu, the noodles, and the sauce mixture into the pan and stir to combine.
Step 12 -Toss the noodle mixture gently until the sauce is absorbed by the noodles, about 1 minute 30 seconds.
Step 13 -Add the garlic chives and 2 tablespoons of the peanuts and toss quickly to combine.
Step 14 -Transfer the pan away from the heat.
Step 15 -Check the chicken slices with a thermometer to ensure they have reached an internal temperature of 165 degrees F.
Step 16 -Serve immediately with the remaining peanuts, a squeeze from the lime wedges, the cayenne, and the remaining bean sprouts.
