Ingredients
- For the potstickers:
- 1 pound ground chicken, can substitute ground turkey or ground pork
- 2 cloves garlic, minced
- 1/2 cup onion, diced
- 1 cup quinoa, cooked
- 2 tablespoons low-sodium soy sauce
- 1 teaspoon ground black pepper
- 25 (4-inch) wonton wrappers
- water, to taste
- For the sauce:
- 3 tablespoons coconut oil
- 1/2 cup beef broth or beef stock
- 3 teaspoons rice vinegar
- 1/3 cup low-sodium soy sauce
- 1 1/2 teaspoons coconut sugar
- 1 teaspoon fresh ginger, grated
- 1 teaspoon garlic, minced
- 1/8 teaspoon ground red pepper
- 1 tablespoon cornstarch
- 2 cups fresh broccoli florets
Directions
Step 1 -In a large bowl, add the chicken, 2 cloves of the minced garlic, the onion, the quinoa, 2 tablespoons of the soy sauce, and the black pepper and mix to combine.
Step 2 -Place 1 tablespoon of the chicken mixture in the center of each of the wonton wrappers.
Step 3 -Brush a few drops of the water around the edges of each of the wonton wrappers, then fold and pinch them to seal.
Step 4 -In a large saucepan over medium-low heat, melt the coconut oil.
Step 5 -Add the potstickers to the hot oil and cook until the bottoms begin to brown, about 3 minutes.
Step 6 -Add the beef broth to the pan and immediately cover and cook the potstickers for 5 minutes.
Step 7 -In a bowl, add the rice vinegar, the remaining soy sauce, the coconut sugar, the ginger, the remaining garlic, the red pepper, and the cornstarch and whisk to combine.
Step 8 -Add the sauce mixture and the broccoli to the pan with the potstickers and replace the lid.
Step 9 -Simmer the potstickers until the sauce has thickened, the broccoli is tender, and the potstickers have an internal temperature of 165 degrees F, about 5 minutes.
Step 10 -Serve.
