Ingredients
- 3/4 cup all-purpose flour
- 3/4 cup whole wheat flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 2 egg whites
- 2 tablespoons granular sweetener or sugar alternative
- 2 tablespoons unsweetened applesauce
- 1/4 cup orange juice
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Prepare a muffin tin by spraying it with cooking spray.
Step 3 -Using a large mixing bowl, mix together all-purpose flour, whole wheat flour, baking powder, and baking soda. Mix until it is fully combined.
Step 4 -In a different mixing bowl, add together the egg whites, sweetener, applesauce, blueberries, orange juice, and vanilla extract, mixing it well.
Step 5 -Fold the wet ingredient mixture into the dry ingredient mixture.
Step 6 -Add in the blueberries and then fold it in lightly so as to not crush the blueberries.
Step 7 -Divide up the batter evenly, scoop it into the sprayed muffin cups.
Step 8 -Finally, bake the muffins until a toothpick that you insert into the center of one of the muffins comes out clean, about 15 minutes.
Step 9 -Move the muffins to a rack to cool from the oven.
Step 10 -Serve warm.
