- 1 1/2 cups panko bread crumbs
- 1/2 teaspoon garlic powder
- 1/4 cup parmesan cheese, freshly grated, plus more for garnish
- 2 large eggs, beaten with 1 tablespoon water
- 1/2 cup all-purpose flour
- 1 1/2 pounds chicken cutlets, boneless, skinless
- kosher salt
- black pepper, freshly ground
- vegetable oil
- 1 cup shredded mozzarella
- 2 tablespoons extra-virgin olive oil
- 1/2 small onion, finely chopped
- 4 cloves garlic, sliced
- 1 (28-ounce) can crushed tomatoes
- 1/4 cup water
- crushed red pepper flakes, to taste
- 2 tablespoons parsley, freshly chopped, plus more for garnish
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Prepare the breading station with three large mixing bowls: one bowl with panko, garlic powder, and Parmesan mixed with a fork; another with the egg mixture; and the third bowl with flour.
Step 3 -Season chicken with salt and pepper, then coat each piece of chicken in flour and shake off excess.
Step 4 -Dip the chicken into the egg mixture and then into bread crumb mixture; repeat the steps for the remaining chicken and set aside on a plate.
Step 5 -In a deep cast-iron skillet over medium-high heat, add 1/4 inch vegetable oil.
Step 6 -When the pan is hot but not smoking, add the chicken.
Step 7 -Cook the chicken until golden brown, 5 to 7 minutes, flipping halfway through. Transfer to a paper towel-lined plate to drain.
Step 8 -In a medium pot over medium heat, heat the olive oil.
Step 9 -Add the onion and garlic and cook until soft, 4 minutes.
Step 10 -Add in the tomatoes and water, season with salt, pepper, and red pepper flakes, and let simmer, about 10 minutes.
Step 11 -Remove from heat and stir in the parsley.
Step 12 -Pour the sauce into a 9x13-inch baking dish and place the chicken in sauce.
Step 13 -Top with mozzarella and bake until the cheese is melty, 10 to 12 minutes. If desired, broil until the cheese is golden, 3 minutes.
Step 14 -Garnish with parsley and serve immediately.
