Whether you're lounging by the pool, hosting a friend, or enjoying some peace and quiet, the sweet and tangy shredded chicken that's topped with a crispy, juicy mango slaw and nestled between two perfectly fluffy buns will be greatly loved. Ingredients
- For the mango slaw:
- 1 small head cabbage, thinly sliced
- 1 mango, thinly sliced
- 1/2 red onion, thinly sliced
- 1/2 cup fresh cilantro
- 3 tablespoons fresh lime juice
- 1/3 cup olive oil
- 1 tablespoon honey
- kosher salt, to taste
- black pepper, to taste
- For the barbecue chicken sandwiches:
- 1 1/2 pounds chicken thighs, boneless and skinless
- kosher salt, to taste
- black pepper, to taste
- 1/2 cup barbecue sauce, plus more, to taste
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon chipotle chili powder
- For serving:
- brioche buns, to taste, split
- barbecue sauce, to taste
- fresh cilantro, to taste, chopped
Directions
Step 1 -Adjust an oven rack so that it is right below the heat source, then preheat the broiler to high heat.
Step 2 -Grease a baking sheet and set it aside.
Step 3 -In a large bowl, add the cabbage, the mangoes, the red onions, and 1/2 cup of the cilantro and mix to combine.
Step 4 -In a medium bowl, add the lime juice, the olive oil, the honey, the salt, and the pepper and whisk to combine.
Step 5 -Pour the dressing over the slaw and toss to coat.
Step 6 -Let the mango slaw sit for 5 minutes, then toss it again. Place the bowl in the refrigerator until ready to serve.
Step 7 -Evenly season each of the chicken thighs all over with the salt and the pepper, then place them on the prepared baking sheet.
Step 8 -Place the baking sheet in the over and broil the chicken thighs, about 6 minutes.
Step 9 -Carefully flip each of the chicken thighs and broil, about 6 minutes.
Step 10 -Evenly brush the extra barbecue sauce over each of the chicken thighs and broil, about 1 minute. Flip them and evenly brush the reverse sides with more of the extra barbecue sauce and broil, about 1 minute. Repeat this process once. Continue to cook until the meat reaches an internal temperature of 165 degrees F.
Step 11 -Place the cooked barbecue chicken thighs in a large bowl and allow them to cool slightly.
Step 12 -Using two forks, shred the chicken thighs.
Step 13 -Add the paprika, the garlic powder, and the chili powder to the shredded barbecue chicken and mix until the mixture is combined.
Step 14 -Add 1/2 cup of the remaining barbecue sauce to the seasoned shredded chicken and mix until it is combined.
Step 15 -Place even amounts the shredded chicken on the bottoms of each of the brioche buns and top with equal amounts of the mango slaw.
Step 16 -Top the sammies with the extra barbecue sauce and the extra cilantro.
Step 17 -Return the top buns and serve.
