This is a delightfully simple but amazingly delicious salad! Cranberry Apple Salad is just loaded with tart dried cranberries, crisp and juicy apples, tangy goat cheese, and fresh spring greens! Ingredients
- For the vinaigrette:
- 1/4 cup extra-virgin olive oil
- 1 1/2 tablespoons apple cider vinegar
- 1 1/2 teaspoons honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon sea salt
- black pepper, to taste
- For the salad:
- 1/4 cup pepitas
- 5 ounces spring greens salad blend
- 1/3 cup dried cranberries
- 1 Granny Smith apple
- 2 ounces goat cheese, crumbled
Directions
Step 1 -In a bowl or a jar, add the olive oil, the vinegar, the honey, the Dijon mustard, and the salt and whisk until well-blended.
Step 2 -Season the dressing with the black pepper.
Step 3 -In a medium skillet over medium heat, add the pepitas and cook, while stirring frequently, until they begin to turn golden, about 2-4 minutes.
Step 4 -Transfer the pepitas to a bowl to cool.
Step 5 -In a large bowl, add the spring greens salad blend, the dried cranberries, and the toasted pepitas.
Step 6 -Just before serving, slice the Granny Smith apple and add the slices to the salad mixture.
Step 7 -Add the goat cheese to the salad mixture.
Step 8 -Add the dressing to the salad mixture and toss lightly to evenly coat.
Step 9 -Serve.
