Just because it is raining outside or the grill is on the fritz doesn't mean you can't enjoy a little BBQ fun! This Countryside Sheet Pan will make sure of that! It's a simple, one-sheet-meal that makes sure you have all you need to appreciate summer's favorite cuisine: buttery, sweet corn on the cob, crispy and golden potatoes with a zesty seasoning, and of course savory, smoky, barbeque-bathed chicken! You literally can't go wrong with the Countryside Sheet Pan! It's impossible not to love it!

Ingredients
- For the vegetables:
- 8 frozen mini corn on the cobs
- 8 tablespoons salted butter, cut into 8 slices
- kosher salt, to taste
- pepper, to taste
- 1 1/2 pounds Yukon gold potatoes, cut into bite-size pieces
- 1 1/2 tablespoons barbeque seasoning
- 1 tablespoon olive oil
- For the chicken:
- 4 medium chicken breasts, boneless and skinless
- 2 tablespoons barbeque seasoning
- 1 tablespoon olive oil
- 1/2 cup sweet barbeque sauce, divided
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Spray a large sheet tray with cooking spray.
Step 3 -Tear off eight small pieces of foil.
Step 4 -Place 1 of the corn cobs on each piece of foil.
Step 5 -Top each corn cob with 1 tablespoon of the butter, the kosher salt, and the pepper.
Step 6 -Wrap the foil around each piece of the corn to form a packet.
Step 7 -Place the foil-wrapped corn cobs on one end of the prepared sheet tray.
Step 8 -Place the potatoes on the center of the prepared sheet tray.
Step 9 -Toss the potatoes with 1 1/2 tablespoons of the barbeque seasoning and 1 tablespoon of the olive oil.
Step 10 -In a large bowl, toss the chicken breasts with the remaining barbeque seasoning and the remaining olive oil until coated.
Step 11 -Place the chicken on the open space of the prepared sheet tray.
Step 12 -Brush the chicken with 1/4 cup of the sweet barbeque sauce.
Step 13 -Bake the sheet tray for 20 minutes.
Step 14 -Toss the potatoes and brush the chicken with the remaining sweet barbeque sauce.
Step 15 -Bake until the potatoes are tender and the chicken reaches 165 degrees F internally, about 20 minutes.
Step 16 -Optionally, switch the oven to the high broil setting and broil the chicken until caramelized, about 2-3 minutes.
Step 17 -Serve immediately.
