Cleaning out the shelves has never been tastier thanks to this cheesy, creamy chicken and veggie bake that's got just about everything in it but the kitchen sink! It even lets you use that bread that's nearing the end of its shelf life to add a yummy, crispy crunch. Who knew pinching pennies could be so tasty?! Ingredients
- 1 cup green onions, chopped
- 1 cup celery, chopped
- 1 small green or red bell pepper, chopped
- 1/2 cup carrots, shredded
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 2 cups chicken, cooked and cubed
- 1 cup cheddar cheese, shredded
- 1 cup part-skim mozzarella cheese, shredded
- 1/2 cup mayonnaise
- 1 tablespoon fresh parsley, minced, can substitute 1 teaspoon dried parsley flakes
- 14 slices whole-wheat bread, day-old and cubed
- 4 large eggs
- 2 cups whole milk
- 1 (10.75-ounce) can condensed cream of chicken soup, undiluted
- 1 tablespoon Worcestershire sauce
- paprika, to taste
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 13x9-inch baking dish.
Step 3 -In a skillet, add the onions, the celery, the green pepper, the carrots, the garlic, and the oil and sauté until the veggies are crisp-tender.
Step 4 -Transfer the veggie mixture to a large bowl.
Step 5 -Add the chicken cubes, the cheddar cheese, the mozzarella cheese, the mayonnaise, and the parsley to the veggie mixture and stir to combine.
Step 6 -Place 1/2 of the bread cubes in the prepared baking dish and top with the chicken mixture.
Step 7 -Sprinkle the remaining bread cubes over the chicken mixture.
Step 8 -In a bowl, beat the eggs.
Step 9 -Add the milk, the cream of chicken soup, and the Worcestershire sauce to the beaten eggs and stir to combine.
Step 10 -Pour the egg mixture over the casserole mixture and sprinkle with the paprika.
Step 11 -Bake the casserole until a knife inserted into the center comes out clean.
Step 12 -Serve.
