Everyone loves potatoes. You can bake 'em, mash 'em, fry 'em... and no matter what, they're out of this world. Well, if you want to blow your mind a little more, give the Best Baked Mashed Potato Cakes a try. Encompassing some of your favorite ways to indulge in these special spuds, each crispy cake is loaded with that yummy potato flavor, plus some salty pancetta and a sprinkle of parmesan to take it all to a new level. Like, who doesn't enjoy meat and cheese mixed in with their potatoes?! We can't think of a single person who doesn't. Best Baked Mashed Potato Cakes will make you fall deeper and deeper in love with every bite!

Ingredients
- 1 3/4 pounds potatoes, peeled and rinsed
- olive oil, to taste
- 2 tablespoons onion, finely chopped
- 2 eggs
- 1 cup pancetta, diced, can substitute ham or bacon
- 2 tablespoons butter
- 2 tablespoons chives, chopped
- salt, to taste
- pepper, to taste
- 1 tablespoon milk, optional
- 4 tablespoons breadcrumbs or panko breadcrumbs
- parmesan cheese, to taste, grated, for serving
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line a baking sheet with parchment paper.
Step 3 -In a large pot of salted boiling water, cook the potatoes until they are cooked through, about 20 minutes.
Step 4 -While the potatoes are cooking, in a skillet, add the oil and the onions and fry until they are translucent.
Step 5 -In a large bowl, add the cooked potatoes, the eggs, the pancetta, the fried onions, the butter, the chives, the salt, and the pepper and mix to combine. Stir in the milk if the mixture is too thick.
Step 6 -Place a ring mold on the prepared baking sheet, then sprinkle a layer of the breadcrumbs inside it.
Step 7 -Scoop some of the potato mixture on top of the breadcrumbs so that the cake is about 1-1/2-inches thick.
Step 8 -Use the back of a spatula to slightly press down on the potato cake, then sprinkle it with another thin layer of the breadcrumbs.
Step 9 -Pull the ring mold away from the potato cake and repeat with the remaining ingredients.
Step 10 -Bake the potato cakes until they are golden, about 10 minutes.
Step 11 -Serve the potato cakes sprinkled with the parmesan.
