Mmmm, a Beef & Cheddar Sandwich. There's something so wonderful about a hot beef sandwich, already marvelous on its own, but getting topped with a homemade creamy and sharp cheddar sauce? Yum! And all on top of a savory onion bun, too! Add in a second sauce, this one tangy and sweet, and Beef & Cheddar Sandwich becomes a deliciously balanced lunch, ready to eat in just half an hour!

Ingredients
- For the cheddar cheese sauce:
- 2 tablespoons butter
- 2 tablespoons flour
- 3/4 cup milk
- 2 cups cheddar cheese, freshly shredded
- salt, to taste
- pepper, to taste
- For the barbecue sauce:
- 1/2 cup ketchup
- 1 tablespoon apple cider vinegar
- 1 tablespoon brown sugar
- 2 tablespoons water
- salt, to taste
- 1/4 teaspoon garlic powder
- 1/2 teaspoon onion powder
- hot sauce, optional, to taste
- For the sandwich:
- 8 onion hamburger buns, split
- 1 pound thinly sliced deli roast beef, rare
- beef broth, optional, to taste
Directions
Step 1 -In a small saucepan over medium heat, melt the butter.
Step 2 -Add the flour to the melted butter and cook, while whisking constantly, until a golden paste forms, about 1 minute.
Step 3 -Slowly add the milk to the butter mixture, while whisking, until no lumps remain and the milk mixture thickens.
Step 4 -Transfer the saucepan from the heat.
Step 5 -Add the cheddar cheese to the roux and stir until the cheese is melted and smooth.
Step 6 -Season the cheese sauce with the salt and the pepper.
Step 7 -In a separate, small saucepan over medium heat, add the ketchup, the apple cider vinegar, the brown sugar, the water, the salt, the garlic powder, the onion powder, and the hot sauce and whisk to combine.
Step 8 -Simmer the barbecue sauce mixture until the flavors meld together, about 2 minutes.
Step 9 -Spread the barbecue sauce on the the cut-sides of each of the bottom buns.
Step 10 -Spray a medium-sized skillet with cooking spray.
Step 11 -In the prepared skillet over medium heat, add the roast beef and cook until just heated through, about 2-3 minutes. If the beef looks dry, add the beef broth, a little at a time, to moisten it.
Step 12 -Evenly place the cooked beef on the sauce layer on each of the buns.
Step 13 -Top the beef on each of the buns evenly with the cheese sauce.
Step 14 -Close the sandwiches and serve.
