Ingredients
- 2 (3-ounce) packages instant ramen, spice packet discarded or reserved for a separate use
- 2 tablespoons unsalted butter
- 1/2 medium red bell pepper, chopped
- 1 small carrot, peeled and thinly sliced into rounds
- 2 cloves garlic, minced
- red pepper flakes, to taste
- 3 tablespoons low-sodium soy sauce
- 3 tablespoons light brown sugar
- 3 large eggs, lightly beaten
- salt, to taste
- black pepper, to taste
- 1 tablespoon everything bagel seasoning, for serving
- scallions, optional, to taste, chopped, for serving
Directions
Step 1 -In a medium pot of boiling water, cook the ramen noodles according to the package instructions.
Step 2 -Drain the noodles and set them aside.
Step 3 -In a large, nonstick skillet over medium-high heat, melt the butter.
Step 4 -Add the bell peppers and the carrots and cook, while stirring often, until softened, about 4 minutes.
Step 5 -Add the garlic and the red pepper flakes and cook, while stirring, until fragrant and golden, about 1 minute.
Step 6 -Add the soy sauce and the brown sugar and cook, while stirring, until the sugar is dissolved and the sauce is boiling, about 15 minutes.
Step 7 -Add the noodles and toss to coat.
Step 8 -Push the noodles to one side of the skillet and add the eggs to the other side.
Step 9 -Season the eggs with the salt and the pepper.
Step 10 -Let the eggs sit until the very edges look like they are set, about 20 seconds.
Step 11 -Stir the eggs and cook, while stirring occasionally, until large, soft curds form, about 3 minutes.
Step 12 -Combine the noodles and the eggs.
Step 13 -Top the noodle mixture with the everything bagel seasoning and the scallions.
Step 14 -Serve.
