Ingredients
- 2 tablespoons vegan butter
- 2 medium onions, chopped finely
- 2 ribs celery, diced
- 2 large carrots, diced
- 4 cloves garlic, finely chopped
- 2 teaspoons salt, plus more, to taste
- 1/2 teaspoon ground black pepper, plus more, to taste
- 4 tablespoons all-purpose flour
- 2 cups non-dairy milk, such as cashew or soy
- 3 cups vegetable broth, divided
- 5 medium potatoes, cut into 1/2-inch cubes
- 1/4 teaspoon ground nutmeg
- 1 bay leaf
Directions
Step 1 -In a large saucepan over medium heat, melt the vegan butter.
Step 2 -Add the onions, the celery, and the carrots and cook, while stirring constantly, until the onions are just starting to brown.
Step 3 -Add the garlic and cook until fragrant, about 2 minutes.
Step 4 -Add 2 teaspoons of the salt, 1/2 teaspoon of the black pepper, and the flour to the butter mixture and cook, while stirring constantly, until the raw flour smell dissipates, about 1 minute.
Step 5 -Gradually add the non-dairy milk to the flour mixture, while stirring constantly, until all lumps are dissolved.
Step 6 -Add 2 1/2 cups of the vegetable broth, the potatoes, the nutmeg, and the bay leaf to the mixture and stir until well-combined.
Step 7 -Reduce the heat to low.
Step 8 -Simmer the soup mixture, while stirring occasionally, until the potatoes are soft and just starting to break down, about 30 minutes.
Step 9 -Add as much of the remaining broth as needed to reach your desired consistency, stirring to combine and cooking until the flavors meld together, about 1-2 minutes.
Step 10 -Taste the soup for seasoning and add the extra salt and the extra pepper, as needed.
Step 11 -Remove and discard the bay leaf.
Step 12 -Serve.
