Ingredients
- 2 tablespoons balsamic vinegar
- 1 tablespoon soy sauce
- 4 cloves garlic, very finely minced, divided
- 2 pounds button mushrooms, cut in half
- 2 tablespoons butter
- salt, to taste
- olive oil, to taste, for the grill grates
- fresh parsley, to taste, chopped, for garnish
Directions
Step 1 -In a large bowl, add the balsamic vinegar, the soy sauce, and 1/5 of the minced garlic and stir to combine.
Step 2 -Add the mushrooms to the balsamic vinegar mixture and toss to coat.
Step 3 -Let the mushroom mixture marinate at room temperature, about 30 minutes.
Step 4 -In a small saucepan over medium heat, melt the butter.
Step 5 -Add the remaining garlic and the salt to the melted butter, stir to combine, and cook, about 1-2 minutes.
Step 6 -Transfer the mushroom mixture from the heat.
Step 7 -Using the olive oil, liberally grease the grates of the grill.
Step 8 -Preheat the grill to medium heat.
Step 9 -Add the marinated mushrooms to flat kabob skewers.
Step 10 -Transfer the mushroom kabobs to the grill and cook, about 5 minutes per side.
Step 11 -Transfer the grilled mushroom kabobs from the grill to a large serving platter and evenly drizzle with the garlic butter mixture.
Step 12 -Garnish with the parsley, plate, and serve.
