Ingredients
- For the soup:
- 3 tablespoons butter
- 5 ribs celery, finely chopped
- 3 medium carrots, finely chopped
- 1 small onion, finely chopped
- 4 cups fresh broccoli florets, chopped
- 1/4 cup sweet red pepper, chopped
- 4 (14.5-ounce) cans chicken broth
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 1/2 cup water
- 3 cups cheddar cheese, shredded
- 1 (8-ounce) package cream cheese, cubed
- 1 (12-ounce) bottle beer or nonalcoholic beer
- Optional toppings:
- cheddar cheese, to taste, shredded
- bacon, to taste, cooked and crumbled
- green onions, to taste, chopped
- sour cream, to taste
- soft pretzel bites, to taste
Directions
Step 1 -In a Dutch oven over medium-high heat, melt the butter.
Step 2 -Add the celery, the carrots, and the onions to the melted butter and sauté until they are crisp-tender.
Step 3 -Add the broccoli and the red pepper to the veggie mixture, then stir in the broth and the black pepper.
Step 4 -In a small bowl, add the flour and the water and stir until it is smooth.
Step 5 -Gradually stir the flour mixture into the soup mixture, then bring to a boil.
Step 6 -Reduce the heat to a simmer and cook until the soup has thickened and the vegetables are tender, 25-30 minutes.
Step 7 -Stir 3 cups of the cheddar cheese, the cream cheese, and the beer into the soup until the cheese has melted. Do not bring to a boil.
Step 8 -Serve the soup with your preferred toppings.
