Ingredients
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup ham, cooked and diced
- 1 cup broccoli florets, chopped
- 4 large eggs, lightly beaten
- kosher salt, to taste
- freshly ground black pepper, to taste
- 2 green onions, thinly sliced
- 4 (4-inch) whole-wheat tortillas
- 1/2 cup reduced-fat cheddar cheese, shredded
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Line a baking sheet with parchment paper.
Step 3 -In a large skillet over medium-high heat, heat the oil.
Step 4 -Add the garlic to the oil and cook, stirring frequently, until it is fragrant, about 1 minute.
Step 5 -Stir the ham and the broccoli into the garlic and cook until the broccoli is tender and bright green, about 3-4 minutes.
Step 6 -Add the eggs to the ham mixture and cook, while stirring with a heat-proof spatula, until the eggs just begin to set.
Step 7 -Season the egg mixture with the salt and the pepper and cook until it has thickened and there is no visible liquid egg remaining, about 3-5 minutes.
Step 8 -Stir the green onions into the egg mixture.
Step 9 -Evenly divide the egg mixture amongst one side of each of the tortillas.
Step 10 -Evenly divide the cheese and sprinkle it atop the egg mixture on each of the tortillas.
Step 11 -Fold the tortillas in half and place them on the prepared baking sheet.
Step 12 -Bake the breakfast quesadillas until the cheese has melted, about 5-6 minutes.
Step 13 -Serve.
