- 1 1/2 cups sugar
- 3/4 cup cocoa powder
- 1/2 cup cornstarch
- 1/8 teaspoon kosher salt
- 4 cups whole milk
- 2 cups half-and-half
- 3 ounces bittersweet chocolate, chopped
- 1 tablespoon vanilla extract
- ice cubes, to taste
- cold water, to taste
- 3 ounces white chocolate, melted
- whipped cream, optional, to taste, for topping
Directions
Step 1 -In a mixing bowl, add the sugar, the cocoa, the cornstarch, and the salt and whisk to combine.
Step 2 -Slowly pour the milk into the cocoa mixture, while whisking constantly, until combined.
Step 3 -Slowly pour the half-and-half into the cocoa mixture, while whisking, until it is smooth.
Step 4 -Pour the cocoa mixture through a fine-mesh sieve into a saucepan.
Step 5 -Place the saucepan over medium heat and bring the cocoa mixture to a boil, while whisking constantly.
Step 6 -Gently boil the cocoa mixture, while whisking, until just hot, about 2 minutes.
Step 7 -Turn off the heat.
Step 8 -Add the bittersweet chocolate and the vanilla extract to the cocoa mixture and stir to combine.
Step 9 -Pour the chocolate mixture into a large bowl.
Step 10 -Fill a second large bowl with the ice cubes.
Step 11 -Nestle the bowl with the chocolate mixture into the ice cubes.
Step 12 -Carefully pour the cold water over the ice cubes, creating an ice bath.
Step 13 -Let the chocolate mixture cool, while stirring frequently with a rubber spatula, until it is smooth and thickened, about 15 minutes.
Step 14 -Add the melted white chocolate to the chocolate mixture and fold to combine.
Step 15 -Evenly scoop the pudding into 1-cup-sized ramekins.
Step 16 -Transfer the ramekins to the refrigerator and allow them to chill until they are set and completely chilled, about 1-2 hours.
Step 17 -Serve the puddings topped with the whipped cream.
