Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, diced
- 2 carrots, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 4 tablespoons tomato paste
- 1 (28-ounce) can crushed tomatoes
- 1 1/2 teaspoons Italian seasoning
- 4 cups vegetable broth
- 1 (19-ounce) package frozen cheese tortellini
- 1/2 cup heavy cream
- 4 ounces fresh spinach
- salt, to taste
- freshly cracked black pepper, to taste
Directions
Step 1 -In a large soup pot over medium heat, heat the olive oil.
Step 2 -Add the onion, the carrot, the celery, and the garlic and sauté until the onions soften, about 5 minutes.
Step 3 -Add the tomato paste and cook until lightly caramelized and fragrant, about 3 minutes.
Step 4 -Add the crushed tomatoes and their juices, the Italian seasoning, and the vegetable broth and stir to ensure that any tomato paste on the bottom of the pot is incorporated into the mixture.
Step 5 -Increase the heat to medium-high heat.
Step 6 -Simmer the soup mixture and cook, while stirring occasionally, until the flavors meld together, about 10 minutes.
Step 7 -Add the tortellini to the soup and cook them according to the package directions.
Step 8 -Turn off the heat.
Step 9 -Add the heavy cream into the soup and stir to combine.
Step 10 -Add the spinach into the soup and stir until wilted.
Step 11 -Taste the soup for seasoning and add the salt and the pepper as needed.
Step 12 -Serve.
