For a Thanksgiving dish with a little extra style and a little Asian fusion, the Teriyaki Turkey Bake is the tops! Savory ground turkey, nutty and tender brown rice, crunchy and sweet cabbage, and garden-fresh broccoli make up the stir-fry-inspired heart of the dish. Ingredients
- For the sauce:
- 1/3 cup rice vinegar
- 1/3 cup water
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 1 tablespoon canola oil
- 1 tablespoon all-purpose flour
- 2 teaspoons ginger, minced
- 1 clove garlic, minced
- For the bake:
- 2 teaspoons canola oil
- 1 pound ground turkey
- 1/2 onion, chopped
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 2 cups broccoli florets
- 1 red bell pepper, diced
- 1/2 napa cabbage, thinly sliced
- 2 cups brown rice, cooked
- 2 tablespoons flat-leaf parsley, minced, for garnish
- 1/2 teaspoon sesame seeds, toasted, for garnish
Directions
Step 1 -In a small saucepan set over medium heat, add the rice vinegar, the water, the soy sauce, the brown sugar, 1 tablespoon of the canola oil, the all-purpose flour, 2 teaspoons of the ginger, and 1 clove of the garlic and whisk to combine.
Step 2 -Bring the mixture to a boil, then simmer until the sauce is thickened, about 5 minutes.
Step 3 -Keep the sauce warm.
Step 4 -Preheat the oven to 350 degrees F.
Step 5 -Grease a 2-quart baking dish
Step 6 -In a large nonstick skillet over medium-high heat, heat the remaining canola oil.
Step 7 -Add the ground turkey and the onion to the hot oil and cook, while crumbling the meat, until the turkey is no longer pink, about 5-7 minutes.
Step 8 -Add the remaining ginger and the remaining garlic to the turkey mixture and cook until fragrant, about 1 minute.
Step 9 -Add the broccoli, the red bell pepper, and the napa cabbage to the turkey mixture and cook until the vegetables are just tender, about 4-5 minutes.
Step 10 -Add the cooked rice and the sauce to the turkey mixture and stir to combine.
Step 11 -Transfer the mixture to the prepared baking dish.
Step 12 -Cover and bake until heated through, about 15 minutes.
Step 13 -Serve garnished with the parsley and the sesame seeds.
