Well, even though a trip to the Tuscan countryside might not be in the cards tonight (back to reality... sorry about that!), you can enjoy this mouthwatering temptation anytime at home! Surrounded by the creamy, garlicy flavor of this tender, juicy chicken that will transport your tastebuds to places they've never been before. Ingredients
- 4 chicken thighs, bone-in and skin-on
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 tablespoon oil
- 3 cloves garlic, chopped
- 1/2 onion, diced
- 1 tomato, diced
- 2 cups spinach
- 2 cups heavy cream
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup parmesan cheese, grated
- 2 tablespoons fresh flat-leaf parsley, chopped
Directions
Step 1 -Season the chicken all over with the salt and the pepper.
Step 2 -In a skillet over medium-low heat, heat the oil.
Step 3 -Place the chicken thighs, skin-side down, in the skillet and cook, moving the chicken around from time to time, until the skin is crisp, about 10-15 minutes.
Step 4 -Flip the chicken and cook until the internal temperature reaches 165 degrees F, about 15 minutes.
Step 5 -Transfer the chicken from the pan.
Step 6 -Add the garlic and the onion to the skillet and cook, while stirring, until the onions are translucent.
Step 7 -Stir the tomatoes and the spinach into the onion mixture and cook until the spinach wilts.
Step 8 -Add the heavy cream, the salt, and the pepper to the spinach mixture and bring it to a boil.
Step 9 -Add the parmesan cheese and the parsley to the spinach mixture and stir until the sauce has slightly thickened.
Step 10 -Place the chicken back in the pan and spoon the sauce on top of it.
Step 11 -Serve warm.
