Ingredients
- For the dressing:
- 3 tablespoons Champagne vinegar
- 1 1/2 tablespoons walnut or olive oil
- 2 teaspoons honey
- 1/4 teaspoon mustard powder
- For the salad:
- 4 cups kale, stems removed, finely shredded
- 1 bell pepper, sliced
- 1 1/2 cups watermelon, cut into small cubes
- 1 carrot, chopped
- 1 1/2 cups blueberries
- 1/4 cup walnuts, chopped
- 1/2 cup pumpkin seeds
Directions
Step 1 -Whisk the Champagne vinegar, the walnut oil, the honey, and the mustard powder together, ensuring the honey has dissolved and the dressing is thoroughly mixed.
Step 2 -In a large bowl, add the kale, then pour the dressing over the kale and mix thoroughly.
Step 3 -Place the kale in the refrigerator to chill for about 5-10 minutes.
Step 4 -Add the bell pepper, the watermelon, the carrot, and the blueberries into the bowl with the kale.
Step 5 -In a skillet over medium heat, toast the chopped walnuts and the pumpkin seeds, stirring to keep them from burning.
Step 6 -Top the salad with the walnuts and the pumpkin seeds, and serve!
