Ingredients

  • 1 (10-ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 cup sharp cheddar cheese, divided
  • 1/3 cup dry breadcrumbs, divided
  • 1 egg, beaten
  • 1 pound cod fillets
  • salt, to taste
  • pepper, to taste

Directions

Step 1 -Preheat the oven to 325 degrees F.

Step 2 -In a medium bowl, combine the spinach, 1/2 cup of the cheddar cheese, 5 tablespoons of the breadcrumbs, and the egg.

Step 3 -Spread the spinach mixture into the bottom of a small baking dish.

Step 4 -Arrange the cod fillets on top of the spinach mixture and season with the salt and the pepper.

Step 5 -Top the cod fillets with the remaining cheddar cheese and the remaining breadcrumbs.

Step 6 -Cover the baking dish and bake the cod fillets until they flake easily with a fork, about 20 minutes.

Step 7 -Serve.
