It delivers an oasis of warmth that is just waiting to enlighten your day! Time doesn't wait for anyone, so go ahead and start (or even end) your day with this very Special Blueberry Breakfast Bake. Ingredients
- 3 tablespoons unsalted butter, melted, plus more, to taste, for greasing the pan
- 2 cups old-fashioned rolled oats
- 2/3 cup dark brown sugar, packed
- 1 cup pecans, chopped, divided
- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2 large eggs
- 1 2/3 cups milk
- 1 teaspoon vanilla extract
- 2 1/2 cups blueberries, divided
- Greek yogurt, optional, to taste, lightly sweetened, for serving
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease an 8-inch square baking dish using the extra butter.
Step 3 -In a large bowl, add the rolled oats, the dark brown sugar, 1/4 cup of the chopped pecans, the baking powder, the cinnamon, the nutmeg, and the salt and mix well to combine.
Step 4 -In a medium bowl, add the eggs and whisk until combined.
Step 5 -Add the milk and the vanilla extract to the eggs and whisk until well-combined.
Step 6 -Add the egg mixture and 3 tablespoons of the melted butter to the oat mixture and stir to combine.
Step 7 -Scatter 2 cups of the blueberries in the bottom of the prepared baking dish.
Step 8 -Spread the oatmeal mixture over the top of the blueberry layer.
Step 9 -Evenly sprinkle the remaining pecans and the remaining blueberries over the top of the oatmeal mixture.
Step 10 -Bake the blueberry mixture until the pecans are a rich brown in color and the oats are set, about 45-55 minutes.
Step 11 -Let the blueberry breakfast bake cool on a wire rack, about 5 minutes.
Step 12 -Plate, either warm or at room temperature, and top with the sweetened Greek yogurt, then serve.
