Ingredients
- 1 cup jasmine or brown rice, uncooked
- 2 Roma tomatoes, diced
- cilantro, chopped, to taste
- 1 lime, juiced and divided
- salt, to taste
- pepper, to taste
- 2-3 tablespoons sour cream
- 1/2 cup plus 1-2 tablespoons water, divided
- 1-2 tablespoons olive oil
- 2 poblano, cubanelle, or bell peppers, cored and chopped
- 1 medium yellow onion, chopped
- 1 pound ground chicken
- 1 (1 ounce) packet taco seasoning
- 1/2–3/4 cups Mexican blend cheese
Directions
Step 1 -Prepare the rice according to the package directions.
Step 2 -Set the rice aside.
Step 3 -In a small bowl, place the tomatoes and cilantro.
Step 4 -Add 1/2 of the lime juice.
Step 5 -Season the tomato mixture with salt and pepper.
Step 6 -Mix the tomato mixture and set it aside.
Step 7 -In another bowl, combine the sour cream, the remaining lime juice, and the 1 tablespoon of the water, stirring the mixture until smooth and thin enough to drizzle, adding water as needed.
Step 8 -Set the sour cream aside.
Step 9 -In a cast-iron skillet or an oven-safe pan, heat the olive oil over medium heat.
Step 10 -Add in the peppers and onions and cook until tender, about 5 minutes.
Step 11 -Preheat the broiler to high.
Step 12 -Add the ground chicken, seasoning with salt and pepper. Break the chicken up while cooking.
Step 13 -Cook the chicken until cooked through with no remaining pink, about 5-6 minutes.
Step 14 -Add the cooked rice to the mixture and stir.
Step 15 -Add the 1/2 cup of the water and the taco seasoning mixture, combining until everything is seasoned evenly.
Step 16 -Add the cheese and broil in the oven until the cheese is melted, about 1-2 minutes.
Step 17 -Top the skillet with the tomato and cilantro mix, followed by the creamy lime sauce on top.
Step 18 -Serve!
