Ingredients
- 12 ounces spaghetti, uncooked
- 1 pound ground beef
- 1 (1-ounce) envelope taco seasoning
- 3/4 cup water
- 1 (15-ounce) can black beans, rinsed and drained
- 1 (10-ounce) can tomatoes and green chiles, diced, undrained
- 2 cups Mexican cheese blend, shredded, divided
- 2/3 cup salsa
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking dish.
Step 3 -Break the spaghetti into thirds.
Step 4 -In a large pot of salted boiling water, cook the spaghetti to al dente, according to the package directions. Drain the spaghetti and set aside.
Step 5 -While the spaghetti is cooking, in a Dutch oven over medium-high heat, cook and stir the ground beef until it is browned and crumbly, about 5-7 minutes. Drain the excess grease.
Step 6 -Add the taco seasoning and the water to the ground beef, bring to a boil, then reduce heat and simmer, stirring occasionally, about 5 minutes.
Step 7 -Add the black beans, the diced tomatoes, 1 cup of the cheese, and the salsa to the ground beef mixture. Mix well and continue to simmer.
Step 8 -Add the cooked spaghetti to the ground beef mixture and toss to combine.
Step 9 -Transfer the spaghetti mixture to the prepared baking dish and bake, covered, about 20 minutes.
Step 10 -Sprinkle the spaghetti mixture with the remaining cheese and bake, uncovered, until the cheese has melted, about 3-5 minutes.
Step 11 -Let the spaghetti mixture stand for 5 minutes.
Step 12 -Plate and serve.
