Ingredients
- 8 ounces ground turkey or lean ground beef
- 3/4 cup green, red, or yellow bell pepper, chopped
- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1 (23.5-ounce) jar pasta sauce
- 1 cup water
- 2 cups fresh mushrooms, sliced
- 3 cups long egg noodles
- 1/2 cup light ricotta cheese
- 2 tablespoons parmesan or Romano cheese, grated
- 1/2 teaspoon dried Italian seasoning, plus more, to taste
- 1/2 cup part-skim mozzarella cheese, shredded
Directions
Step 1 -Coat an extra-large nonstick skillet with cooking spray and place it over medium heat.
Step 2 -Add the ground turkey, the bell pepper, the onion, and the garlic and cook, while crumbling the meat, until the turkey is no longer pink, about 5-7 minutes.
Step 3 -Drain the excess grease and return the turkey mixture to the skillet.
Step 4 -Add the pasta sauce and the water to the meat mixture and bring to a boil, stirring frequently.
Step 5 -Add the mushrooms and the noodles to the sauce mixture and stir to separate the noodles. Return to a boil.
Step 6 -Reduce the heat to medium-low, cover the skillet, and gently boil the noodle mixture, stirring occasionally, until the noodles are tender, about 10 minutes.
Step 7 -In a medium bowl, add the ricotta cheese, the parmesan cheese, and 1/2 teaspoon of the Italian seasoning and stir to combine.
Step 8 -Drop about 9-10 small mounds of the ricotta cheese mixture on top of the noodle mixture.
Step 9 -Sprinkle each of the cheese mounds with the mozzarella cheese and the extra Italian seasoning.
Step 10 -Reduce the heat to low, cover the skillet, and cook until the cheese mounds are heated and the mozzarella has melted, about 4-5 minutes.
Step 11 -Serve.
