Ingredients

  • 14 ounces pasta, preferably butternut squash pasta
  • 8-9 ounces Brussels sprouts, stems discarded and sprouts chopped into thin pieces
  • 1 Granny Smith apple, cored and chopped into small cubes
  • 3 ounces dried cranberries
  • 1/2 cup pecans, chopped and toasted
  • 1/3 cup mayonnaise
  • 2 tablespoons sour cream
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dry mustard or mustard powder

Directions

Step 1 -Cook the pasta to al dente according to package directions.

Step 2 -Drain the pasta and allow it to cool.

Step 3 -In a large bowl, combine the cooked pasta, the Brussels sprouts, the apples, the dried cranberries, and the pecans.

Step 4 -In a small bowl, stir the mayo, the sour cream, the apple cider vinegar, the olive oil, the salt, the pepper, and the dry mustard.

Step 5 -Drizzle the dressing over the salad and toss until everything is coated and combined.

Step 6 -Serve.
