Ingredients
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 jalapeño, seeded and diced
- 1 Roma tomato, diced, plus more for garnish
- 2 tablespoons all-purpose flour
- 2 cups unsweetened coconut milk
- 3 cups cheddar cheese, shredded
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1/4 cup plain Greek yogurt
- 1 avocado, halved, seeded, peeled, and diced
- 2 tablespoons fresh cilantro leaves, chopped
Directions
Step 1 -Melt the butter in a medium saucepan over medium-high heat.
Step 2 -Add the garlic and the jalapeño to the melted butter and cook, stirring frequently, until fragrant, about 1 minute.
Step 3 -Stir in the tomato until softened, about 1-2 minutes.
Step 4 -Whisk in the flour until lightly browned, about 1 minute.
Step 5 -Gradually whisk in the coconut milk and cook, whisking constantly, until slightly thickened, about 4-5 minutes.
Step 6 -Stir in the cheddar, a handful at a time, until smooth, about 1-2 minutes.
Step 7 -Stir in the chili powder and the cumin and season the mixture with the salt and the pepper, to taste.
Step 8 -Stir in the Greek yogurt until well-combined, about 1 minute.
Step 9 -Serve immediately and garnish with the extra tomatoes, the avocado, and the cilantro.
