Simple is not always basic or boring. Simple Vanilla Muffins are packed with so much vanilla-ness (that's a word now, haha) flavor that your breakfast guests will be spellbound by their goodness! The key to said goodness is the room temperature of some of the key ingredients like eggs, butter, and milk, and then of course the showstopper, vanilla extract. Along with a bit of sugar, all that mixed together discovers and brings out all the lovely sweetness. These moist Simple Vanilla Muffins are sure to take center stage on any brunch table and maybe even hit the take-notice list for an afternoon snack. They're really that outstanding!

Ingredients
- 1 cup granulated sugar
- 1/2 cup unsalted butter, room temperature
- 2 eggs, room temperature
- 2 teaspoons vanilla extract
- 1/2 cup vegetable oil
- 1 cup whole milk, room temperature
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon white vinegar
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Line the wells of a 12-cup muffin pan with paper liners.
Step 3 -In a large bowl of an electric stand mixer, add the sugar and the butter and beat until light and fluffy, about 2-3 minutes.
Step 4 -Slowly add the eggs, 1 at a time, to the butter mixture and beat after each addition.
Step 5 -Add the vanilla extract to the batter and beat to combine.
Step 6 -With the mixer on medium-low speed, slowly add the vegetable oil to the batter and beat to combine.
Step 7 -Slowly add the milk to the batter and beat to combine.
Step 8 -Use a sifter to sift the flour, the baking powder, and the salt into the batter. Then, use a rubber spatula and fold to combine. Do not overmix.
Step 9 -In a small bowl, add the baking soda and the vinegar and whisk until combined and bubbly.
Step 10 -Immediately add the vinegar-baking soda mixture to the batter and fold until it is just combined.
Step 11 -Using a spoon, fill each of the prepared wells of the muffin pan about 3/4 of the way full with the batter.
Step 12 -Bake the muffins until a toothpick inserted into the center comes out clean, about 20-22 minutes. Do not overbake in order to prevent drying out.
Step 13 -Serve.
