Ingredients
- 2 tablespoons olive oil
- 2 whole chicken breasts, boneless and skinless, diced
- 2 tablespoons Italian seasoning
- salt, to taste
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 (14-ounce) jar marinara sauce
- 1 teaspoon red pepper flakes
- 12 ounces bowtie pasta, cooked according to the package directions
- 1/2 cup whole milk ricotta cheese
- 1 cup mozzarella cheese, grated
- 1/4 cup parmesan, plus more for serving, grated
- 12 whole basil leaves, plus more for serving, chopped
Directions
Step 1 -In a large skillet over medium-high heat, heat the oil.
Step 2 -Season the chicken breasts with the Italian seasoning and the salt.
Step 3 -Add the seasoned chicken breasts to the skillet and cook until they reach an internal temperature of 165 degrees F and are golden-brown, about 5-10 minutes. Transfer the chicken breasts to a plate.
Step 4 -Add the onion and the garlic to the same skillet and cook, while stirring, until they are fragrant, about 3 minutes.
Step 5 -Add the chicken broth to the onion mixture and cook, while scraping the bottom of the skillet to loosen the bits, until the broth has reduced, about 2-3 minutes.
Step 6 -Add the marinara sauce and the red pepper flakes to the broth mixture and simmer for 10 minutes.
Step 7 -Turn the heat off and add the cooked pasta, the ricotta, the mozzarella, the parmesan, the basil, and the chicken breasts to the marinara mixture and toss to combine.
Step 8 -Sprinkle with the parmesan and the basil and serve.
