We all have those days. You know the ones where you barely have enough time to eat, let alone a time slot big enough for making a whole meal? On days like that, you should make Set-It & Forget-It Chili! All you have to do is brown some juicy beef, dump the rest of the fixin's in the pot, and let it simmer. Then, voila! Dinner is ready like magic. There's no need for the drive-thru when time is tight, because Set-It & Forget-It Chili is just way better and just as easy!

Ingredients
- For the chili
- 2 pounds lean ground beef
- 2 1/2 tablespoons chili powder, divided
- 1 onion, diced
- 1 jalapeño, seeded and finely diced
- 4 cloves garlic, minced
- 1 teaspoon cumin
- 1 green bell pepper, diced
- 1 (14.5-ounce) can crushed tomatoes
- 1 (19-ounce) can kidney beans, drained and rinsed
- 1 (14.5-ounce) can diced tomatoes
- 1 1/2 cups beef broth
- 1 cup beer, of your choice
- 1 tablespoon tomato paste
- 1 tablespoon brown sugar
- salt, to taste
- pepper, to taste
- Optional toppings:
- cheddar cheese, to taste, shredded
- green onions, to taste, chopped
- cilantro leaves, to taste
Directions
Step 1 -In a large mixing bowl, add the ground beef and 1 1/2 tablespoons of the chili powder and mix together.
Step 2 -In a large pot over medium heat, add the seasoned ground beef, the onion, the jalapeño, and the garlic and cook, while crumbling the meat, until the beef is no longer pink. Drain the excess grease.
Step 3 -Add the remaining chili powder, the cumin, the bell pepper, the crushed tomatoes and their juices, the kidney beans, the diced tomatoes and their juices, the beef broth, the beer, the tomato paste, the brown sugar, the salt, and the pepper and stir to combine.
Step 4 -Reduce the heat and simmer the chili, uncovered, until it reaches the desired thickness, about 45 minutes-1 hour.
Step 5 -Transfer the pot from the heat.
Step 6 -Serve the chili topped with the cheddar cheese, the green onions, and the cilantro.
