  • 4 cups sweet potato, peeled and chopped
  • 1 sweet onion, cut into wedges
  • 2 cloves garlic, sliced
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • salt, to taste
  • ground black pepper, to taste

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -In a large bowl, add the sweet potatoes, the onions, and the garlic and toss gently to combine.
