When a savory side dish is on your mind, kick the potato to the curb. Savory Zucchini Sticks are the perfect answer for your snack or side dish needs. Sliced like that other vegetable in a French-fry shape, these zesty, coated zucchini sticks are baked until golden-brown. They're perfect for dipping in a creamy, zingy Greek-yogurt-and-chive-creation that will make you forget all about its tomato-based counterpart (or you may like that too, and that's ok). Savory Zucchini Sticks are adult-and-kid-friendly and will become a new staple. They are easy, quick, delicious, and sure to please the masses! Step aside our little, fried spud friend, there's a new zealously baked veggie in town!

Ingredients
- For the zucchini sticks:
- 1 cup panko breadcrumbs
- 1/2 cup parmesan cheese, grated
- 1 tablespoon garlic powder
- 1 tablespoon dried basil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 eggs
- 2 zucchinis, cut into french-fry-sized strips
- For the yogurt-chive dip:
- 1 cup Greek yogurt
- 1 tablespoon lemon juice
- 2 tablespoons fresh chives, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Line an 18x26-inch baking sheet with parchment paper.
Step 3 -In a large bowl, add the panko breadcrumbs, the parmesan cheese, the garlic powder, the basil, 1 teaspoon of the salt, and 1 teaspoon of the black pepper and stir to combine.
Step 4 -In a shallow dish, add the eggs and whisk well.
Step 5 -Dip the zucchini sticks in the beaten eggs and coat well.
Step 6 -Add the coated zucchini sticks to the breadcrumb mixture and toss to evenly coat.
Step 7 -Add the dredged zucchini sticks to the prepared baking sheet and bake, flipping them halfway through, about 15-20 minutes.
Step 8 -While the zucchini sticks are baking, in a medium, air-tight bowl with a lid, add the Greek yogurt, the lemon juice, the chives, the remaining salt, and the remaining black pepper and stir to combine.
Step 9 -Cover the bowl with the lid and refrigerate the sauce until ready to serve.
Step 10 -Serve the zucchini sticks with the yogurt-chive dip.
