Ingredients
- butter, for greasing a baking dish
- 1 pound breakfast sausage
- 4 scallions, chopped, white and green parts separated
- 1 red bell pepper, chopped
- 10 eggs
- 1 1/4 cups heavy cream
- 1 tablespoon Dijon mustard
- 2 teaspoons hot sauce, optional
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 2 cups sharp cheddar cheese, shredded, divided
- 1 (30-ounce) package frozen shredded hashbrowns, thawed
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x13-inch baking dish with butter.
Step 3 -In a large skillet over medium-high heat, cook the sausage, while breaking it up into small pieces, until it is no longer pink, about 6-8 minutes.
Step 4 -Add the white parts from the scallions and the red bell pepper to the sausage and cook until the veggies are tender, about 3 minutes.
Step 5 -Transfer the meat mixture to a plate to slightly cool.
Step 6 -In a large bowl, whisk the eggs, the heavy cream, the Dijon mustard, the hot sauce, the salt, the black pepper, and 1/2 of the green parts from the scallions together.
Step 7 -Gently fold 1 1/2 cups of the cheese, the hashbrowns, and the meat mixture into the egg mixture.
Step 8 -Transfer the casserole mixture into the prepared baking dish and smooth it into an even layer.
Step 9 -Cover the dish with foil and bake for 50 minutes.
Step 10 -Uncover and top the casserole with the remaining cheese.
Step 11 -Increase the oven temperature to 400 degrees F and bake until the center of the casserole is set and the top is golden-brown, about 10-15 minutes.
Step 12 -Let the casserole rest for 10 minutes.
Step 13 -Top the casserole with the remaining green parts from the scallions.
Step 14 -Serve.
