Ingredients
- 1/2 tablespoon butter
- 5 teaspoons flour
- 2 cups milk, divided
- 1/2 cup Greek yogurt
- 1 cup cheddar cheese, shredded
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic, minced
- 2 cups old-fashioned oatmeal
- 3 cups broccoli, cooked and chopped
- 1 egg
- 1/2 teaspoon baking soda
Directions
Step 1 -Preheat oven to 350 degrees F.
Step 2 -Grease an 8-inch square baking pan or a 9-inch square cake pan.
Step 3 -Melt the butter in a medium nonstick skillet over medium-low heat.
Step 4 -In a separate bowl, whisk together the flour and 1/2 cup of the milk until completely smooth.
Step 5 -Add the flour mixture to the skillet, followed by the remaining milk.
Step 6 -Raise the heat to medium and cook until the sauce mixture is thickened, whisking constantly, about 7-10 minutes. If the flour begins to stick to the bottom, transfer the skillet from the burner and reduce the heat before moving the skillet back onto the burner.
Step 7 -Transfer the skillet from the heat.
Step 8 -Add the Greek yogurt, the cheese, the salt, the pepper, and the garlic and whisk until all the cheese is melted and the sauce reaches a smooth, creamy texture.
Step 9 -In a large bowl, combine the oatmeal, the broccoli, the egg, the baking soda, and the Greek yogurt mixture.
Step 10 -Once the mixture is well-combined, add it to the prepared pan.
Step 11 -Bake the oatmeal until it is fully set and a toothpick inserted into the middle comes out clean, about 30-35 minutes.
Step 12 -If desired, broil the oatmeal bake for 30 seconds-1 minute before transferring the pan from the oven to get an extra crispy top.
Step 13 -Let the oatmeal bake cool for 5 minutes.
Step 14 -Serve.
