It's time to grab your dancing shoes and shake, shake, shake up some sweet, creamy dressing for a Pomegranate Salad! This syrupy, cheerful condiment gets shimmied all over some sweet, ripe persimmons, and fresh, crispy kale. Now, it's time to do "the sprinkler" and sprinkle those tart, crunchy pomegranate seeds on top. Ready in under 15 minutes, Pomegranate Salad will have your taste buds doing the disco!

Ingredients
- For the dressing:
- 1/2 cup olive oil
- 1/2 cup maple syrup
- 1/4 cup rice vinegar
- 2 tablespoons Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- For the salad:
- 3 ripe Fuyu persimmons or 3 plums, sliced
- 2 (10-ounce) packages baby kale salad blend
- 1 cup pomegranate seeds
Directions
Step 1 -In a jar with a lid, place the olive oil, the maple syrup, the rice vinegar, the mustard, the salt, and the pepper. Cover and shake well.
Step 2 -Refrigerate the dressing until ready to serve.
Step 3 -Transfer the dressing from the refrigerator and shake it well.
Step 4 -In a medium bowl, toss the persimmons with 1/2 cup of the dressing.
Step 5 -In a large bowl, place the kale salad blend and toss it with the remaining dressing.
Step 6 -Top the salad with the dressed persimmons and the pomegranate seeds.
Step 7 -Serve.
