You have the picnic blanket, the basket, and the cold sodas. All you need now is the picnic site and, of course, these Perfect Picnic Sandwiches. These grilled barbecue chicken sandwiches are literally soaking in flavor with the sweet and tangy sauce coating the savory chicken. Stacked with tomato and lettuce on a toasty Kaiser roll, Perfect Picnic Sandwiches are great for taking to work, enjoying indoors, or, yes, eating outside in the sun!

Ingredients
- 1 1/2 pounds chicken breasts, boneless and skinless
- 1/2 cup barbecue sauce
- 1 cup mayonnaise
- 1/2 cup onion, finely chopped
- 1/2 cup celery, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper flakes
- 8 Kaiser rolls, split
- 8 slices tomato
- 8 leaves lettuce
Directions
Step 1 -In a shallow baking dish, add the chicken breasts and the barbecue sauce and turn the chicken to coat completely.
Step 2 -Cover the baking dish and let the chicken breasts marinate in the refrigerator for at least 8 hours and up to overnight.
Step 3 -Preheat the grill to medium-high.
Step 4 -Add the chicken breasts to the hot grill and cook, flipping them once, until the chicken breasts reach an internal temperature of 165 degrees F, about 6-8 minutes per side.
Step 5 -Transfer the chicken breasts to a plate to cool slightly.
Step 6 -Cover the chicken breasts and place them in the refrigerator until chilled, about 1 hour.
Step 7 -Chop the chicken breasts.
Step 8 -In a bowl, add the chopped chicken, the mayonnaise, the onions, the celery, the salt, and the pepper flakes and stir to combine.
Step 9 -Optionally, toast the split Kaiser rolls under the broiler, about 2 minutes.
Step 10 -Add the chicken mixture, the tomato slices, and the lettuce leaves evenly to the Kaiser rolls.
Step 11 -Serve.
