Ingredients
- 2 tablespoons olive oil
- 1/2 onion, diced
- salt, to taste
- 8 ounces spicy Italian sausages, casings removed
- 3 1/2 cups low-sodium chicken broth, divided
- 1 1/4 cups orecchiette pasta, plus more, to taste
- 1/2 cup arugula, roughly chopped
- 1/4 cup parmesan cheese, finely grated
Directions
Step 1 -Heat the olive oil in a large, deep skillet over medium heat.
Step 2 -Add the onion and the salt to the skillet and cook, stirring frequently, until the onion softens and turns translucent, about 5 minutes.
Step 3 -Add the sausage to the onion and cook until browned, about 5-7 minutes.
Step 4 -Add 1 1/2 cups of the chicken broth to the sausage mixture and bring to a boil, while scraping the browned bits from the bottom of the pan using a wooden spoon.
Step 5 -Add the pasta and the remaining broth to the sausage mixture and simmer until the pasta is cooked through and most of the broth is absorbed, about 15 minutes.
Step 6 -Add the arugula to the sausage/pasta mixture and stir until the arugula wilts.
Step 7 -Sprinkle the pasta with the cheese.
Step 8 -Serve.
